  • 8 oz. of your favorite pasta (penne or fusilli work great)
  • 2 Chicken sausages, sliced
  • 2 cups of spinach
  • 1 cup of cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

  • Instructions

  • Start by measuring out your ingredients and chopping the chicken sausages and cherry tomatoes. Mince the garlic cloves finely.
  • Bring a pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions (8-10 minutes).
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced chicken sausages and sauté for about 3-4 minutes or until they start to brown.
  • Add the minced garlic and sauté for an additional minute. Then, add the spinach and cherry tomatoes, cooking until the spinach wilts and the tomatoes soften (about 2-3 minutes).
  • Drain the pasta al dente, reserving a cup of pasta water. Add the drained pasta to the skillet with the sausage and vegetables.
  • Gently toss everything together. If the mixture is dry, add a splash of reserved pasta water. Season with salt and pepper to taste and cook for 1-2 minutes.
  • Divide the pasta among meal prep containers. Sprinkle Parmesan cheese on top if desired.
