8 oz. of your favorite pasta (penne or fusilli work great)
2 Chicken sausages, sliced
2 cups of spinach
1 cup of cherry tomatoes, halved
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Parmesan cheese for garnish (optional)
Instructions
Start by measuring out your ingredients and chopping the chicken sausages and cherry tomatoes. Mince the garlic cloves finely.
Bring a pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions (8-10 minutes).
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced chicken sausages and sauté for about 3-4 minutes or until they start to brown.
Add the minced garlic and sauté for an additional minute. Then, add the spinach and cherry tomatoes, cooking until the spinach wilts and the tomatoes soften (about 2-3 minutes).
Drain the pasta al dente, reserving a cup of pasta water. Add the drained pasta to the skillet with the sausage and vegetables.
Gently toss everything together. If the mixture is dry, add a splash of reserved pasta water. Season with salt and pepper to taste and cook for 1-2 minutes.
Divide the pasta among meal prep containers. Sprinkle Parmesan cheese on top if desired.
