2 cups almond flour
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon salt
1/4 cup maple syrup
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1 large egg
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the almond flour, baking soda, ground ginger, cinnamon, cloves, and salt. Mix well.
In another bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, and egg until combined.
Pour the wet ingredients into the dry ingredients and mix until fully combined.
Form balls of dough and place them on a parchment-lined baking sheet, spaced about 2 inches apart.
Bake in the preheated oven for 12-15 minutes until firm around the edges but soft in the center.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
