1 cup all-purpose flour
1 ½ cups sugar
6 large egg whites
1 teaspoon cream of tartar
1 teaspoon vanilla extract
Oil for frying
1 cup sugar mixed with 2 tablespoons of cinnamon (for coating)
Instructions
Preheat your oven to 350°F (175°C). In a large bowl, whip the egg whites and cream of tartar until stiff peaks form. Gradually add sugar, continuing to beat until glossy. Gently fold in the flour and vanilla until just combined.
Pour the batter into an ungreased angel food cake pan and smooth the top. Bake for about 40-45 minutes until the cake springs back when lightly pressed. Let it cool upside down.
Once the cake is cooled, cut it into bite-sized pieces. Heat oil in a deep pan to about 350°F (175°C). Fry the cake pieces until golden brown, about 2-3 minutes on each side.
After frying, immediately toss the churro bites in the cinnamon-sugar mixture until fully coated.
