½ cup (melted) of unsalted butter
2 large eggs
2 cups of apples (peeled and diced)
1 cup of oats
½ cup of milk (any kind)
½ cup of caramel sauce (for drizzling)
Instructions
Begin by preheating your oven to 350°F (175°C).
In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt. In another bowl, mix the melted butter, eggs, diced apples, and milk until well combined. Gradually pour this wet mixture into the dry ingredients, stirring until just combined.
Gently fold in the oats to add a chewy texture to your cupcakes.
Line a muffin tin with cupcake liners and fill each one about two-thirds full with the batter. Bake in the preheated oven for 25 to 30 minutes or until a toothpick comes out clean.
Once baked, cool them in the tin for 10 minutes before transferring to a wire rack.
