1 teaspoon salt
1 tablespoon sugar
1 cup unsalted butter, chilled and diced
6 to 8 tablespoons ice water
5 to 6 Granny Smith apples, peeled, core removed, and sliced
¾ cup sugar
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons all-purpose flour
2 tablespoons lemon juice
1 egg, beaten (for egg wash)
1 tablespoon unsalted butter, to dot
Instructions
In a large bowl, combine the flour, salt, and sugar. Add the chilled butter, and using a pastry cutter, mix until it resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Split the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
In a separate bowl, toss the sliced apples with sugar, cinnamon, nutmeg, flour, and lemon juice. Let the mixture sit while you roll out the dough.
On a floured surface, roll out one disk of dough into a circle large enough to fit your pie pan. Transfer it to the pan, trimming any excess dough hanging over the edges.
Pour the apple filling into the prepared crust. Dot the filling with small pieces of butter to enhance flavor.
Roll out the second disk of dough and place it over the apple filling. Seal the edges by crimping with a fork. Cut a few slits in the top to allow steam to escape.
Brush the top crust with the beaten egg to give it a golden color while baking. Place your pie in a preheated oven at 425°F (220°C) and bake for 15 minutes. Reduce temperature to 350°F (175°C) and continue baking for 45-50 minutes, or until the apples are tender and the crust is golden brown.
