  • In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until well incorporated.
  • Gradually add the dry ingredient mixture into the butter mixture, mixing just until combined. Fold in the diced apples gently.
  • Using a cookie scoop or tablespoon, drop the cookie dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  • Roll each dough ball in the sugar and cinnamon mixture before placing them on the baking sheet.
