¼ cup sugar mixed with 1 tsp cinnamon (for rolling)
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, combine flour, baking soda, salt, and cinnamon. Whisk together until evenly blended.
In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Beat in the egg and vanilla extract until well incorporated.
Gradually add the dry ingredient mixture into the butter mixture, mixing just until combined. Fold in the diced apples gently.
Using a cookie scoop or tablespoon, drop the cookie dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Roll each dough ball in the sugar and cinnamon mixture before placing them on the baking sheet.
