  • 4 slices of Bacon
  • 1 pound of Gnocchi
  • 2 tablespoons of Unsalted butter
  • 1 medium Onion (diced)
  • 3 cloves of Garlic (minced)
  • 4 cups of Chicken broth
  • 1 cup of Heavy cream
  • 2 tablespoons of Cornstarch
  • 1 cup of Cheddar cheese (shredded)
  • 2 cups of Spinach (fresh)
  • Salt and pepper to taste

  • Instructions

  • In a large pot, cook the bacon over medium heat until crispy (5-7 minutes). Transfer to a plate lined with paper towels.
  • Add butter to the pot with leftover drippings, melt, and sauté diced onion for 3-4 minutes. Then add minced garlic and cook for an additional minute.
  • Pour chicken broth into the pot and bring to a simmer.
  • Add gnocchi to the pot and cook according to package instructions until they float (2-3 minutes).
  • In a separate bowl, whisk heavy cream and cornstarch together until smooth, then stir into the pot and cook for 2-3 more minutes until thickened.
  • Add half of the shredded cheddar cheese and stir until melted, then mix in spinach and allow it to wilt.
  • Season with salt and pepper and stir in the crispy bacon before serving, garnishing with the remaining cheddar.
