4 slices of Bacon
1 pound of Gnocchi
2 tablespoons of Unsalted butter
1 medium Onion (diced)
3 cloves of Garlic (minced)
4 cups of Chicken broth
1 cup of Heavy cream
2 tablespoons of Cornstarch
1 cup of Cheddar cheese (shredded)
2 cups of Spinach (fresh)
Salt and pepper to taste
Instructions
In a large pot, cook the bacon over medium heat until crispy (5-7 minutes). Transfer to a plate lined with paper towels.
Add butter to the pot with leftover drippings, melt, and sauté diced onion for 3-4 minutes. Then add minced garlic and cook for an additional minute.
Pour chicken broth into the pot and bring to a simmer.
Add gnocchi to the pot and cook according to package instructions until they float (2-3 minutes).
In a separate bowl, whisk heavy cream and cornstarch together until smooth, then stir into the pot and cook for 2-3 more minutes until thickened.
Add half of the shredded cheddar cheese and stir until melted, then mix in spinach and allow it to wilt.
Season with salt and pepper and stir in the crispy bacon before serving, garnishing with the remaining cheddar.
