1 lb of Ground Chicken
1 cup of Breadcrumbs
½ cup of grated Parmesan Cheese
1 large Egg
3 cloves of Garlic, minced
¼ cup of chopped Parsley
1 cup of Orzo Pasta
Juice of 1 Lemon
2 tablespoons of Olive Oil
Salt and Pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and pepper. Mix until just combined.
Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a parchment-lined baking sheet.
Bake the meatballs in your preheated oven for 25-30 minutes, until cooked through and golden brown.
While the meatballs are baking, bring a pot of salted water to boil. Cook the orzo according to package instructions (about 8-10 minutes). Drain and set aside.
In a large bowl, combine the cooked orzo with lemon juice and olive oil. Season with salt and pepper to taste.
Serve the lemon orzo on plates topped with the baked chicken meatballs and garnish with additional parsley if desired.
