  • 1 medium butternut squash, peeled and diced
  • 8 oz feta cheese, crumbled
  • 12 oz pasta (your choice)
  • 1/4 cup fresh sage, chopped
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup vegetable broth
  • Salt to taste
  • Pepper to taste

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix the diced butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread on a parchment-lined baking sheet.
  • Roast the squash for about 30-35 minutes, turning halfway through.
  • Place the crumbled feta cheese in a small baking dish, drizzle with remaining olive oil, and sprinkle with half the chopped sage. Bake for 20-25 minutes.
  • Cook pasta according to package directions in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water.
  • In a skillet, sauté minced garlic in olive oil until fragrant, then add roasted squash and feta along with vegetable broth. Mix and add pasta, using reserved pasta water as needed.
  • Stir in remaining chopped sage and serve immediately.
