1 medium butternut squash, peeled and diced
8 oz feta cheese, crumbled
12 oz pasta (your choice)
1/4 cup fresh sage, chopped
3 tbsp olive oil
4 cloves garlic, minced
1 cup vegetable broth
Salt to taste
Pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, mix the diced butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread on a parchment-lined baking sheet.
Roast the squash for about 30-35 minutes, turning halfway through.
Place the crumbled feta cheese in a small baking dish, drizzle with remaining olive oil, and sprinkle with half the chopped sage. Bake for 20-25 minutes.
Cook pasta according to package directions in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water.
In a skillet, sauté minced garlic in olive oil until fragrant, then add roasted squash and feta along with vegetable broth. Mix and add pasta, using reserved pasta water as needed.
Stir in remaining chopped sage and serve immediately.
