Ingredients
Scale
2 ripe bananas, sliced lengthwise (substitution: plantains for a twist)
4 tablespoons unsalted butter
1 cup brown sugar (dark brown sugar adds richer flavor)
1 teaspoon ground cinnamon
1/4 cup banana liqueur (optional, can use more rum)
1/2 cup dark rum (for flambéing)
Vanilla ice cream, for serving
Instructions
Start by gathering all your ingredients. Make sure your bananas are ripe but not overly soft, as you want them to hold their shape when caramelized. Cut them lengthwise so they are easy to flip in the pan.
In a large skillet, melt the butter over medium heat. Once melted, add the brown sugar and cinnamon, stirring until the mixture is bubbly and well combined, resembling a caramel sauce.
Gently place the sliced bananas into the skillet, cut side up. Allow them to cook in the caramel sauce for about 2 minutes, then carefully flip them to coat the other side.
Add the banana liqueur (if using) and rum to the skillet, and carefully ignite the mixture with a long lighter or matches. Allow the flames to subside as the alcohol burns off, approximately 30 seconds.
Once the flames have extinguished, remove the skillet from heat. Scoop generous portions of the warm banana mixture over bowls of vanilla ice cream. Enjoy while hot for the best experience.
