1 lb of salmon fillet, cut into bite-sized pieces
1 cup of flour
1 cup of panko breadcrumbs
2 large eggs
¼ cup of Sriracha
½ cup of mayonnaise
2 tablespoons of honey
1 tablespoon of lemon juice
Salt and pepper to taste
Instructions
Start by cutting the salmon fillet into bite-sized pieces and pat them dry with a paper towel.
In three separate bowls, set up your breading station: place flour in the first bowl, whisk the eggs in the second, and put panko breadcrumbs in the third.
Dip each piece of salmon into the flour to coat, then into the egg wash, and finally coat with panko breadcrumbs.
Heat vegetable oil in a large skillet over medium-high heat and add the breaded salmon bites in batches, cooking for about 3-4 minutes on each side until golden brown.
Combine mayonnaise, Sriracha, honey, and lemon juice in a bowl to prepare the Bang Bang sauce.
Serve the salmon bites drizzled with the Bang Bang sauce or as a dipping sauce on the side.
