Ingredients
Scale
2 large apples (like Granny Smith or Honeycrisp), peeled and diced
1 cup all-purpose flour (can substitute with gluten-free flour)
1/2 cup granulated sugar (or coconut sugar for a healthier twist)
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 large egg, beaten
1/4 cup milk (almond or oat milk works well)
1 tsp vanilla extract
For the glaze: 1 cup powdered sugar and 2-3 tbsp milk
Instructions
Preheat your oven to 375°F (190°C). Peel and dice the apples into small cubes and toss them with a sprinkle of cinnamon.
In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon, whisking until well blended.
In another bowl, whisk together the beaten egg, milk, and vanilla extract. Slowly add this wet mixture to the dry ingredients, stirring until just combined.
Gently fold the diced apples into the batter using a spatula.
Drop generous scoops of the batter onto a parchment-lined baking sheet, spacing them at least 2 inches apart.
Bake in the preheated oven for about 20-25 minutes or until golden brown. Prepare the glaze by mixing powdered sugar and milk until smooth, and drizzle over the fritters while warm.
