Ingredients
Scale
2 large Chicken breast (boneless, skinless)
1 cup Heavy cream
1 cup grated Parmesan cheese
3 cloves Garlic (minced)
2 tablespoons Olive oil
2 cups fresh Spinach
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 7 minutes on one side, then flip and cook for an additional 5-7 minutes, or until fully cooked through and browned. Take the chicken out of the pan and set aside to rest.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring to combine all the flavors. Allow the cream to come to a simmer, then reduce the heat and add in the grated Parmesan cheese, stirring well until the cheese melts and creates a creamy sauce.
Next, add the fresh spinach to the sauce. Cook for about 2-3 minutes until the spinach wilts and is infused with the rich flavors of the sauce. If the sauce is too thick, feel free to add a splash of broth or more cream to reach your desired consistency.
Slice the rested chicken into strips and return it to the skillet. Toss everything together to ensure the chicken is fully coated in the creamy Alfredo sauce. Cook for another minute to heat through. Serve hot, garnished with additional Parmesan cheese and freshly cracked black pepper if desired.
