Ingredients
Scale
2 cups of all-purpose flour
1 ½ cups of granulated sugar
1 cup of unsalted butter, softened
1 cup of buttermilk
3 large eggs
1 tablespoon of vanilla extract
1 teaspoon of baking soda
½ teaspoon of salt
2 cups of fresh blackberries (pureed)
1 cup of unsalted butter, softened (for frosting)
4 cups of powdered sugar (for frosting)
¼ cup of blackberry puree (for frosting)
1 tablespoon of heavy cream (for frosting)
Blackberry compote for decoration
Instructions
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Cream the softened butter and sugar together until light and fluffy. Mix in the eggs one at a time, followed by the vanilla extract.
In another bowl, sift together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, alternating with the buttermilk. Fold in the blackberry puree until evenly incorporated.
Pour the batter into the prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean.
Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack.
Prepare the frosting by beating softened butter until creamy, then gradually adding powdered sugar.
Blend in the blackberry puree, adjusting consistency with heavy cream if necessary.
Place one cake layer on a serving plate, frost the top, add the second layer, and cover the entire cake with remaining frosting.
Decorate with edible flowers, blackberries, and drizzle with blackberry compote.
