  • 2 cups of all-purpose flour
  • 1 cup of sugar
  • 1 cup of frozen blueberries
  • 8 oz of cream cheese
  • 2 large eggs
  • 1/2 cup of butter (melted)
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • 1/4 tsp of salt

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the cream cheese and 1/3 cup of sugar until smooth.
  • In a large mixing bowl, whisk together the all-purpose flour, remaining sugar, baking powder, and salt.
  • In another bowl, whisk the eggs, melted butter, and vanilla extract together.
  • Pour the wet ingredients into the dry mixture, stirring gently until just combined. Fold in the blueberries.
  • Half of your batter goes into a greased loaf pan. Then, dollop the cream cheese mixture on top and swirl it in slowly. Pour the remaining batter over it.
  • Bake in your preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, let it cool in the pan for 10 minutes before transferring it to a wire rack.
