1 lb of diced chicken breast
2 tbsp of olive oil
3 cloves of minced garlic
2 chopped carrots
2 chopped stalks of celery
6 cups of chicken broth
1/4 cup of freshly squeezed lemon juice
1/4 cup of chopped fresh parsley
Salt to taste
Pepper to taste
In a large pot over medium heat, warm the olive oil until it shimmers.
Add the minced garlic and allow it to sauté for about 1 minute until fragrant.
