4 large bell peppers (any color)
2 cups shredded cooked chicken
1/2 cup Buffalo sauce
1 cup cream cheese, softened
1 cup shredded cheese
1/4 cup chopped green onions
Salt and pepper to taste
Optional: Sliced jalapeños, extra cheese
Instructions
Preheat your oven to 375°F (190°C). Carefully slice the tops off the bell peppers and remove the seeds.
In a mixing bowl, combine the shredded chicken with Buffalo sauce, cream cheese, half of the shredded cheese, and green onions. Season with salt and pepper.
Scoop the filling into each bell pepper, packing it slightly. Place the stuffed peppers upright in a baking dish.
Sprinkle the remaining cheese on top. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes.
Let the peppers cool slightly, then serve warm, garnished with extra green onions if desired.
