  • 1 medium butternut squash, peeled and cubed
  • 1 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 4 cups fresh spinach or arugula
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • Pepper to taste

  • Instructions

  • Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread it evenly on a baking sheet lined with parchment paper. Roast for 25-30 minutes until tender and lightly caramelized, stirring halfway through.
  • In a small bowl, whisk together the balsamic vinegar and remaining tablespoon of olive oil.
  • In a large bowl, combine the fresh spinach or arugula, dried cranberries, chopped walnuts, red onion, and the roasted butternut squash. Gently toss these ingredients together.
  • Sprinkle the crumbled feta cheese over the top of the salad just before serving.
  • Drizzle the dressing over the salad and give it one last gentle toss. Serve immediately.
