1 medium butternut squash, peeled and cubed
1 cup feta cheese, crumbled
3 tablespoons olive oil
4 cups fresh spinach or arugula
1/2 cup walnuts, chopped
1/2 cup dried cranberries
1/4 cup red onion, thinly sliced
2 tablespoons balsamic vinegar
Salt to taste
Pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread it evenly on a baking sheet lined with parchment paper. Roast for 25-30 minutes until tender and lightly caramelized, stirring halfway through.
In a small bowl, whisk together the balsamic vinegar and remaining tablespoon of olive oil.
In a large bowl, combine the fresh spinach or arugula, dried cranberries, chopped walnuts, red onion, and the roasted butternut squash. Gently toss these ingredients together.
Sprinkle the crumbled feta cheese over the top of the salad just before serving.
Drizzle the dressing over the salad and give it one last gentle toss. Serve immediately.
