  • 2 large sweet potatoes, peeled and cubed
  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons Cajun seasoning (store-bought or homemade)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ cup diced red onion
  • 1 bell pepper, chopped (any color works!)
  • 1 can black beans, rinsed and drained
  • ½ cup corn (fresh or frozen)
  • Fresh cilantro for garnish (optional)

  • Instructions

  • Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  • Roast your sweet potatoes for about 20-25 minutes or until fork-tender and slightly caramelized.
  • Prepare your chicken breasts by rubbing them generously with Cajun seasoning and a pinch of salt and pepper.
  • In a skillet over medium-high heat, add a sprinkle of olive oil and place the chicken breasts. Cook for about 6-7 minutes on each side until fully cooked.
  • In the same skillet, add diced red onions and bell pepper. Sauté until softened, approximately 3–4 minutes, then add black beans and corn, warming through for another 2–3 minutes.
  • Layer a scoop of roasted sweet potatoes at the base of your bowl, add sautéed vegetables, and top with sliced Cajun chicken. Garnish with fresh cilantro.
