2 large sweet potatoes, peeled and cubed
2 chicken breasts, boneless and skinless
2 tablespoons Cajun seasoning (store-bought or homemade)
1 tablespoon olive oil
Salt and pepper to taste
¼ cup diced red onion
1 bell pepper, chopped (any color works!)
1 can black beans, rinsed and drained
½ cup corn (fresh or frozen)
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
Roast your sweet potatoes for about 20-25 minutes or until fork-tender and slightly caramelized.
Prepare your chicken breasts by rubbing them generously with Cajun seasoning and a pinch of salt and pepper.
In a skillet over medium-high heat, add a sprinkle of olive oil and place the chicken breasts. Cook for about 6-7 minutes on each side until fully cooked.
In the same skillet, add diced red onions and bell pepper. Sauté until softened, approximately 3–4 minutes, then add black beans and corn, warming through for another 2–3 minutes.
Layer a scoop of roasted sweet potatoes at the base of your bowl, add sautéed vegetables, and top with sliced Cajun chicken. Garnish with fresh cilantro.
