1 lb of chicken breasts (boneless, skinless)
2 cans of cannellini beans (canned)
4 cups of chicken broth
1 can (13.5 oz) of coconut milk
1 medium onion (diced)
4 cloves of garlic (minced)
2 tbsp of Cajun seasoning
1 cup (mixed colors) of bell peppers (diced)
1/4 cup of fresh cilantro (chopped)
1 lime (juiced)
Salt and pepper to taste
Instructions
Step 1: Season the chicken breasts with salt and pepper. Grill, sauté, or bake until fully cooked, about 20 minutes. Shred the chicken and set aside.
Step 2: Heat olive oil in a large pot over medium heat. Add diced onion; sauté for 3-4 minutes until soft. Stir in minced garlic; cook for another minute.
Step 3: Add diced bell peppers and sauté for 2-3 minutes until they begin to soften.
Step 4: Stir in shredded chicken, drained and rinsed cannellini beans, chicken broth, coconut milk, and Cajun seasoning. Mix well.
