Ingredients

  • 12 oz of fettuccine or tagliatelle pasta
  • 2 leeks, trimmed and sliced
  • 8 oz of sliced mushrooms (cremini or button)
  • 1 cup of grated Gruyere cheese
  • 3 tablespoons of unsalted butter
  • 3 cloves of garlic, minced
  • 1 teaspoon of chopped fresh thyme
  • 1 cup of heavy cream
  • Salt to taste
  • Pepper to taste

  • Instructions

  • Bring a large pot of salted water to a rolling boil. Add the fettuccine or tagliatelle pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and reserve about 1 cup of the pasta water for later.
  • While the pasta cooks, melt 1 tablespoon of butter in a large skillet over medium heat. Add the sliced leeks and sauté for about 5-7 minutes until they become soft and caramelized, stirring occasionally for even cooking.
  • Next, add another tablespoon of butter to the skillet and toss in the sliced mushrooms. Cook for 5 minutes until the mushrooms are tender and their juices are released. Stir frequently for perfect browning.
  • Add the minced garlic and fresh thyme to the skillet, stirring for an additional minute to release the fragrant aroma.
  • Pour the heavy cream into the skillet, stirring well to combine with the leeks and mushrooms. Let it simmer for about 3-4 minutes until it thickens slightly. If the sauce becomes too thick, add back the reserved pasta water a little at a time until you reach your desired consistency.
