  • 2 pounds of flank steak or skirt steak
  • 1/4 cup of fresh lime juice
  • 4 garlic cloves, minced
  • 1/4 cup of fresh cilantro, chopped
  • 2 teaspoons of cumin
  • 2 teaspoons of chili powder
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 medium onion, sliced

  • Instructions

  • In a bowl, combine lime juice, minced garlic, chopped cilantro, cumin, chili powder, olive oil, salt, and pepper. Mix well.
  • Place the flank or skirt steak in a resealable bag. Pour the marinade over the meat. Seal the bag and refrigerate for at least 1 hour.
  • Heat a skillet over medium-high heat and sear the marinated meat for 2-3 minutes on each side until golden brown.
  • Add sliced onion to the bottom of the crockpot. Place the seared or marinated steak on top and pour any remaining marinade over the meat.
  • Cover the crockpot and cook on low for 8 hours or on high for 4 hours.
  • Remove the steak from the crockpot and shred it using two forks. Return the shredded meat to the pot and mix with the juices.
