2 pounds of flank steak or skirt steak
1/4 cup of fresh lime juice
4 garlic cloves, minced
1/4 cup of fresh cilantro, chopped
2 teaspoons of cumin
2 teaspoons of chili powder
2 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon of pepper
1 medium onion, sliced
In a bowl, combine lime juice, minced garlic, chopped cilantro, cumin, chili powder, olive oil, salt, and pepper. Mix well.
Place the flank or skirt steak in a resealable bag. Pour the marinade over the meat. Seal the bag and refrigerate for at least 1 hour.
Heat a skillet over medium-high heat and sear the marinated meat for 2-3 minutes on each side until golden brown.
Add sliced onion to the bottom of the crockpot. Place the seared or marinated steak on top and pour any remaining marinade over the meat.
Cover the crockpot and cook on low for 8 hours or on high for 4 hours.
Remove the steak from the crockpot and shred it using two forks. Return the shredded meat to the pot and mix with the juices.
