3/4 cup brown sugar, packed

2 cups semi-sweet chocolate chips
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
Instructions
In a mixing bowl, combine the softened cream cheese, sugar, vanilla extract, and egg. Beat until smooth and creamy. Set aside.
In a large bowl, whisk together the flour, baking soda, and salt. In another bowl, cream the softened butter with granulated and brown sugar until light and fluffy. Add in the eggs one at a time, followed by the vanilla extract. Gradually incorporate the dry ingredients into the wet mixture and fold in the chocolate chips.
Preheat your oven to 350°F (175°C). On a baking sheet lined with parchment paper, scoop a tablespoon of cookie dough and flatten it slightly. Place a heaping teaspoon of cheesecake filling in the center and encase it with more cookie dough. Ensure the cheesecake filling is completely covered.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
