1 pound of boneless, skinless chicken breast, cut into bite-sized pieces
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 medium onion, chopped
2 cups of shredded cheddar cheese
2 tablespoons of olive oil
1 tablespoon of taco seasoning
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Substitutions: Ground turkey or tofu can be used as protein alternatives, and any color of bell pepper will work!
Instructions
In a large skillet, heat olive oil over medium-high heat. Add the bite-sized chicken pieces and cook for about 5-7 minutes, or until fully cooked and golden brown. Stir occasionally to prevent sticking.
Add the chopped onion and sliced bell peppers to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
Sprinkle taco seasoning over the cooked chicken and vegetables. Stir well to coat all ingredients evenly, then season with salt and pepper to taste. Cook together for another 3-4 minutes.
Reduce the heat to low. Sprinkle shredded cheddar cheese generously over the chicken and vegetable mixture. Cover the skillet and let it sit for 5 minutes, allowing the cheese to melt.
