1 pound (450g) potato gnocchi
1 pound (450g) ground beef (or a blend of beef and pork)
1 onion, finely chopped
2 cloves garlic, minced
1 carrot, grated
1 can (14 oz) crushed tomatoes
2 tablespoons tomato paste
1 cup beef broth
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
Fresh parsley, for garnish (optional)
Instructions
Cook the gnocchi according to package instructions until they float in boiling water (about 2-3 minutes). Drain and set aside.
In a large skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and grated carrot, cooking for an additional 2 minutes. Stir in the ground beef and cook until browned.
Add the crushed tomatoes, tomato paste, and beef broth to the skillet. Season with oregano, basil, salt, and pepper. Simmer for 10 minutes.
In a large mixing bowl, combine the cooked gnocchi with the Bolognese sauce, mixing gently. Pour the mixture into a greased baking dish.
