1 ½ cups all-purpose flour
½ cup granulated sugar – or substitute with coconut sugar for a lower glycemic option
2 tsp baking powder
¼ tsp salt
1/3 cup unsalted butter, melted
1 large egg, beaten – or use a flaxseed egg as a vegan substitute
1 tsp vanilla extract
¾ cup buttermilk – swap for almond milk and vinegar for a dairy-free option
1 cup fresh or frozen cherries, pitted and halved
¾ cup crumble topping (mix of flour, brown sugar, and butter)
Preheat your oven to 375°F (190°C).
Grease a 12-cup muffin tin or line it with paper liners.
In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until evenly mixed.
In another bowl, mix the melted butter, beaten egg, vanilla extract, and buttermilk.
Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
Fold in the halved cherries into the batter.
Spoon the muffin batter into prepared muffin cups, filling each about ¾ full.
Generously sprinkle the crumble topping over each muffin.
Bake for about 20-25 minutes, until a toothpick comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
