  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • Start by heating the olive oil in a large pot over medium heat. Season the chicken with salt and pepper, then add it to the pot. Sear for about 5 minutes on each side, until golden brown. Once cooked, remove and set aside to cool.
  • In the same pot, add the diced onion, carrots, and celery. Sauté for approximately 5-7 minutes until the vegetables are softened and fragrant. Stir in the minced garlic and cook for an additional minute.
  • Return the seared chicken to the pot, add the chicken broth, thyme, and bay leaf. Bring to a boil, then reduce heat to simmer. Cook for about 30 minutes, allowing the flavors to meld beautifully.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back to the soup. Then, add the egg noodles and continue to simmer for another 10-12 minutes, or until the noodles are tender.
  • Finally, taste your soup before serving and adjust the seasonings as necessary. Remove the bay leaf, ladle the soup into bowls, and garnish with fresh parsley for a touch of color and flavor.
