1 can (15 oz) crushed tomatoes
2 teaspoons Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional for heat)
1 cup small pasta (like ditalini or cavatappi)
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil leaves for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add the chicken breasts, and season with salt and pepper. Sauté until golden brown, about 5-7 minutes per side. Remove and shred the chicken.
Add the diced onion to the pot and sauté for about 3 minutes. Stir in minced garlic and cook for an additional minute.
Pour in the chicken broth and add crushed tomatoes. Mix in Italian seasoning and crushed red pepper flakes. Bring to a gentle boil.
Add the small pasta of your choice to the boiling mixture. Lower the heat and simmer for about 10-12 minutes, until al dente.
Incorporate the shredded chicken back into the pot.
Stir in shredded mozzarella and grated Parmesan cheese until melted and combined.
