2 cups of all-purpose flour
3 large eggs
1 pound of ground chicken
1 cup of ricotta cheese
½ cup of grated Parmesan cheese
½ cup of fresh basil leaves, chopped

4 cups of chicken broth
Instructions
In a large mixing bowl, combine the flour and a pinch of salt. Create a well in the center and crack in the eggs. Gradually mix the flour into the eggs until the mixture forms a dough. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.
In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant, about 1 minute. Add ground chicken to the skillet, season with salt and pepper, and cook until browned. In a bowl, combine the cooked chicken, ricotta cheese, grated Parmesan, and chopped basil. Mix until well combined and creamy.
After the dough has rested, divide it into four equal portions. Using a pasta machine or a rolling pin, roll each portion into thin sheets, about 1/16 of an inch thick. Dust your working surface with flour to prevent sticking.
Place small mounds of the chicken mixture (about a tablespoon) on one sheet of pasta, spacing them at least 2 inches apart. Use a brush or your fingers to wet the edges of the pasta with water. Carefully place another sheet of pasta over the top, sealing around each mound of filling by pressing the edges together. Cut out squares or circles using a knife or ravioli cutter, ensuring all edges are sealed tight.
Boil a large pot of salted water. Carefully add the ravioli one by one, being cautious not to overcrowd the pot. Cook for about 3-4 minutes or until they float to the top. Use a slotted spoon to remove them, and transfer to a plate. If desired, drizzle with olive oil or serve immediately with chicken broth.
