1 can (15 oz) of cooked and cooled chickpeas
1 cup of crumbled feta cheese
1 ripe avocado
1 medium diced cucumber
1 cup of halved cherry tomatoes
1/4 cup of finely chopped red onion
1/4 cup of chopped fresh parsley
3 tablespoons of olive oil
2 tablespoons of fresh lemon juice
Salt and pepper to taste
Instructions
Start with the star of our salad—the chickpeas. If you’re using canned chickpeas, simply drain, rinse, and set aside. For dried chickpeas, soak overnight and then boil until tender.
