1 cup of all-purpose flour
1/2 cup of cocoa powder
1/2 cup of unsalted butter, softened
3/4 cup of granulated sugar
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of salt
1 large egg
1 teaspoon of vanilla extract
1 cup of mini marshmallows
1 cup of chocolate ice cream (or your favorite flavor)
1 cup of crushed graham crackers
Instructions
Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy. Then, add the egg and vanilla extract, mixing until well combined.
In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until evenly mixed. Gradually incorporate the dry ingredients into the wet mixture, mixing until a dough forms.
Prepare a baking sheet lined with parchment paper. Roll the dough into small balls and place them on the baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are firm but the centers are slightly soft. Let them cool completely on a wire rack.
Once the cookies are cooled, take one cookie, add a scoop of chocolate ice cream on top, sprinkle with mini marshmallows, and then place another cookie on top. Press gently to create a sandwich.
Wrap each ice cream sandwich in plastic wrap or foil and place them in the freezer for at least 60 minutes to set the ice cream.
