  • 1 large egg

  • 1 cup of mini marshmallows
  • 1 cup of chocolate ice cream (or your favorite flavor)
  • 1 cup of crushed graham crackers

  • Instructions

  • Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy. Then, add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until evenly mixed. Gradually incorporate the dry ingredients into the wet mixture, mixing until a dough forms.
  • Prepare a baking sheet lined with parchment paper. Roll the dough into small balls and place them on the baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are firm but the centers are slightly soft. Let them cool completely on a wire rack.
  • Once the cookies are cooled, take one cookie, add a scoop of chocolate ice cream on top, sprinkle with mini marshmallows, and then place another cookie on top. Press gently to create a sandwich.
