1 medium yellow onion, diced
4 cloves of garlic, minced
2 bell peppers, chopped (1 red, 1 yellow)
2 medium carrots, diced
1 medium zucchini, diced
1 can (15 oz) of chickpeas, drained and rinsed
1 can (14.5 oz) of diced tomatoes
4 cups of vegetable broth
2 cups of spinach or kale
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat. Once it shimmers, add the diced onion. Sauté for about 5 minutes until the onions are translucent, inviting aromatic scents into your kitchen. Add the minced garlic and stir for another minute, being careful not to let it burn.
Next, toss in the chopped bell peppers, diced carrots, and zucchini. Cook for an additional 7-10 minutes, stirring occasionally, until the veggies begin to soften.
