  • 1/2 cup of fresh coriander (cilantro), chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt to taste
  • Black pepper to taste

  • Instructions

  • Begin by thoroughly rinsing 1 cup of basmati or jasmine rice under cold water to remove excess starch.
  • In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
  • Add the rinsed rice to the saucepan, stirring it into the garlic. Toast the rice for about 2-3 minutes.
  • Pour in 2 cups of water or vegetable broth into the saucepan. Bring it to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15 minutes.
  • Once the cooking time is up, remove the pot from heat but keep it covered. Let it sit for 5 minutes. After, mix in 1/4 cup of lemon juice and 1/2 cup of chopped coriander. Fluff with a fork.
  • Finally, season with salt and black pepper to taste. Serve warm, garnished with additional coriander if desired.
