1 cup of rice (Basmati or Jasmine)
2 cups of water or vegetable broth
1/4 cup of lemon juice
1/2 cup of fresh coriander (cilantro), chopped
2 cloves of garlic, minced
1 tablespoon of olive oil

Instructions
Begin by thoroughly rinsing 1 cup of basmati or jasmine rice under cold water to remove excess starch.
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
Add the rinsed rice to the saucepan, stirring it into the garlic. Toast the rice for about 2-3 minutes.
Pour in 2 cups of water or vegetable broth into the saucepan. Bring it to a boil, then reduce the heat to low. Cover the pot and let it simmer for 15 minutes.
Once the cooking time is up, remove the pot from heat but keep it covered. Let it sit for 5 minutes. After, mix in 1/4 cup of lemon juice and 1/2 cup of chopped coriander. Fluff with a fork.
Finally, season with salt and black pepper to taste. Serve warm, garnished with additional coriander if desired.
