1 lb of Italian sausage (bulk or links)
4 medium Yukon Gold or red potatoes, diced
2 cups of chopped kale or spinach
1 medium onion, diced
4 cloves of garlic, minced
2 medium carrots, diced
6 cups of vegetable or chicken broth
1 cup of heavy cream
1 tbsp of Italian seasoning
2 tbsp of olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart with a spatula. Cook for about 5-7 minutes or until browned.
Stir in the diced onions, minced garlic, and carrots. Sauté for an additional 3-4 minutes until the onions are translucent.
Add the diced potatoes and pour in the broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, until the potatoes are tender.
