1 can (15 oz) pumpkin puree
4 cups chicken broth (low-sodium preferred)
1 cup heavy cream or coconut milk for a dairy-free option
1 medium onion, diced
2 cloves garlic, minced
2 tsp dried thyme
1 tsp ground cumin
1 tsp cinnamon
Salt and pepper, to taste
Chopped fresh parsley or sage for garnish
Instructions
In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
Stir in the pumpkin puree, dried thyme, cumin, and cinnamon.
Add the shredded chicken and pour in the chicken broth. Stir everything together to combine.
Allow the soup to simmer for about 10-15 minutes on low heat.
Stir in the heavy cream or coconut milk. Season with salt and pepper to taste. Let it cook for another 5 minutes, stirring occasionally.
