1 bag (12 ounces) fresh or frozen cranberries
1 cup granulated sugar
1 package (3 ounces) cranberry-flavored Jell-o
1 cup boiling water
1 cup cold water
1 cup chopped apples (optional)
1 cup chopped walnuts or pecans (optional)
1 package (8 ounces) cream cheese, softened
1 cup whipped topping or heavy whipping cream
Fresh orange zest (optional)
Chopped celery (optional)
Cinnamon (optional)
Rinse the cranberries and place them in a saucepan over medium heat. Add 1 cup of sugar and stir until the cranberries burst open, about 10 minutes.
In a separate bowl, dissolve the Jell-o in boiling water, stirring until fully dissolved. Add cold water and mix well.
Combine the cranberry mixture with the Jell-o in a large bowl. If desired, fold in chopped apples and nuts.
Pour the mixture into a mold or serving dish. Cover and refrigerate for at least 4 hours or until set.
In a medium bowl, beat the softened cream cheese until smooth. Gradually mix in the whipped topping until the mixture is well combined.
Once the Jell-o salad has set, spread the cream cheese mixture over the top. Chill for an additional hour before serving.
