1 pound ground turkey
2 cups stuffing mix (or homemade breadcrumbs)
1/2 cup dried cranberries, chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup celery, finely diced
1/4 cup fresh parsley, chopped
1 teaspoon dried sage
1 teaspoon dried thyme
1 egg, beaten
1/4 cup chicken broth (or vegetable broth)
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a skillet, sauté the chopped onion, garlic, and celery in olive oil over medium heat until soft, about 5 minutes.
In a large bowl, combine ground turkey, sautéed vegetables, stuffing mix, dried cranberries, fresh parsley, sage, thyme, and egg. Add chicken broth and mix gently.
Form the mixture into golf-ball-sized balls (1-2 inches in diameter) and place on a greased baking sheet.
