1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
500g (about 1 lb) fresh mushrooms, sliced (button or cremini work best)
1 teaspoon thyme leaves (fresh or dried)
4 cups vegetable broth
1 cup heavy cream (or coconut milk for a dairy-free option)
Salt and pepper to taste
Fresh parsley for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Introduce the minced garlic, cooking until fragrant, around 1 minute.
Add the sliced mushrooms and thyme to the pot. Sauté for an additional 10 minutes until the mushrooms are browned.
Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and simmer for about 15 minutes.
Using an immersion blender, carefully purée the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender.
Return the blended soup to the pot and stir in the heavy cream. Season with salt and pepper and heat through without boiling.
