  • 1 teaspoon thyme leaves (fresh or dried)
  • 4 cups vegetable broth
  • 1 cup heavy cream (or coconut milk for a dairy-free option)
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Introduce the minced garlic, cooking until fragrant, around 1 minute.
  • Add the sliced mushrooms and thyme to the pot. Sauté for an additional 10 minutes until the mushrooms are browned.
  • Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and simmer for about 15 minutes.
  • Using an immersion blender, carefully purée the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender.
