  • 1 lb of Italian sausage
  • 1 fennel bulb, thinly sliced
  • 23 tablespoons of Calabrian chili paste (to taste)
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1/4 cup of chopped fresh parsley (for garnish)
  • Salt & Pepper to taste

  • Instructions

  • Begin by bringing a large pot of salted water to a boil. Add the pappardelle and cook according to package instructions until al dente, reserving about a cup of pasta water before draining.
  • In a large skillet over medium heat, add olive oil. Remove the casing from the sausage and crumble it into the skillet. Cook until browned, about 5-7 minutes.
  • Add the sliced fennel and minced garlic to the cooked sausage, cooking for an additional 3-4 minutes until the fennel is tender.
  • Stir in the Calabrian chili paste and cook for about a minute.
  • Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted. Adjust sauce thickness with reserved pasta water.
  • Add the drained pappardelle to the skillet, tossing to coat with the sauce. Season with salt and pepper as needed.
