12 oz of pappardelle pasta
1 lb of Italian sausage
1 fennel bulb, thinly sliced
2–3 tablespoons of Calabrian chili paste (to taste)
1 cup of heavy cream
1/2 cup of grated Parmesan cheese
2 tablespoons of olive oil
4 cloves of garlic, minced
1/4 cup of chopped fresh parsley (for garnish)
Salt & Pepper to taste
Instructions
Begin by bringing a large pot of salted water to a boil. Add the pappardelle and cook according to package instructions until al dente, reserving about a cup of pasta water before draining.
In a large skillet over medium heat, add olive oil. Remove the casing from the sausage and crumble it into the skillet. Cook until browned, about 5-7 minutes.
Add the sliced fennel and minced garlic to the cooked sausage, cooking for an additional 3-4 minutes until the fennel is tender.
Stir in the Calabrian chili paste and cook for about a minute.
Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted. Adjust sauce thickness with reserved pasta water.
Add the drained pappardelle to the skillet, tossing to coat with the sauce. Season with salt and pepper as needed.
Garnish with fresh parsley and serve immediately.
