Ingredients
Scale
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
3 tablespoons olive oil
4 cloves garlic, minced
½ teaspoon red pepper flakes
1 cup heavy cream
½ cup chicken broth
1 tablespoon lemon juice
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
1 cup long-grain rice
2 cups chicken broth
½ cup grated parmesan cheese
3 tablespoons butter
2 cloves garlic, minced (for rice)
Fresh parsley, chopped (for rice garnish)
Instructions
In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add more olive oil if needed and sauté minced garlic until fragrant (about 30 seconds). If you're adding red pepper flakes, throw them in now. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom. Stir in heavy cream and lemon juice. Allow sauce to thicken slightly, about 3-4 minutes.
In a separate pot, melt butter over medium heat. Add minced garlic and sauté until fragrant. Pour in rice and stir to coat. Add chicken broth, bring to a boil, reduce heat to low, cover, and simmer for about 15-20 minutes until rice is tender and liquid is absorbed.
Once rice is cooked, remove from heat. Stir in grated parmesan cheese and garnish with fresh parsley. Fluff the rice with a fork before serving.
Add chicken back into skillet with the creamy sauce and allow to heat through for a few minutes. Adjust seasoning as needed with more salt, pepper, or lemon juice.
To serve, plate a generous helping of garlic parmesan rice, top with creamy chicken scampi, and garnish with fresh parsley. Enjoy your meal!
