  • 2 cups heavy cream
  • 1 cup beef broth (or vegetable broth for vegetarian version)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups croutons or stale bread cubes
  • 1 ½ cups Swiss cheese, grated
  • ½ cup Parmesan cheese, grated

  • Instructions

  • In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally. Cook for about 20-25 minutes until the onions are a rich, golden brown.
  • Once the onions are caramelized, stir in the minced garlic and fresh thyme, cooking for an additional 2-3 minutes until fragrant.
  • Pour the white wine into the skillet to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes until slightly reduced.
  • Stir in the heavy cream and beef broth, along with the salt and pepper. Bring this mixture to a gentle simmer, allowing it to thicken slightly. Remove from heat.
  • In a large mixing bowl, combine the croutons and half of the grated Swiss cheese. Pour the creamy onion mixture over the top, gently mixing until all the croutons are well coated.
  • Grease a 9×13 inch baking dish and pour in the casserole mixture. Spread it evenly across the dish. Top with the remaining Swiss cheese and the Parmesan cheese.
