  • 8 oz. pasta (fettuccine or penne are great choices)
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: Spinach or sundried tomatoes for an extra flavor boost

  • Instructions

  • In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of pasta water before draining.
  • In a large skillet over medium heat, add olive oil. Once hot, add diced chicken and season with salt and pepper. Sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it! Add the heavy cream and allow it to simmer.
  • Stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese has melted and the sauce is creamy. If it’s too thick, add reserved pasta water a little at a time until you achieve the desired consistency.
  • Add the cooked pasta and chicken back into the skillet. Toss gently to coat them in the creamy sauce. Adjust seasoning if needed.
  • Plate the pasta and garnish with fresh parsley. Serve immediately and enjoy!
