8 oz. pasta (fettuccine or penne are great choices)
2 tablespoons olive oil
2 boneless, skinless chicken breasts, diced
6 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Optional: Spinach or sundried tomatoes for an extra flavor boost
Instructions
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of pasta water before draining.
In a large skillet over medium heat, add olive oil. Once hot, add diced chicken and season with salt and pepper. Sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it! Add the heavy cream and allow it to simmer.
Stir in the grated Parmesan cheese and Italian seasoning. Mix until the cheese has melted and the sauce is creamy. If it’s too thick, add reserved pasta water a little at a time until you achieve the desired consistency.
Add the cooked pasta and chicken back into the skillet. Toss gently to coat them in the creamy sauce. Adjust seasoning if needed.
Plate the pasta and garnish with fresh parsley. Serve immediately and enjoy!
