1 cup of orzo pasta
2 cups of broccoli florets
4 cups of chicken or vegetable broth
1 cup of shredded cheddar cheese
1/2 cup of heavy cream
1 medium onion (chopped)
3 cloves of garlic (minced)
2 tablespoons of olive oil
Salt and pepper to taste
Optional: red pepper flakes to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Add the orzo to the pot and toast for 1-2 minutes.
Pour in the chicken or vegetable broth and bring to a boil. Reduce to a simmer and cover, cooking for about 10 minutes until al dente.
Add the broccoli florets, re-cover, and steam for 2-3 minutes.
Stir in the heavy cream and shredded cheddar cheese until melted and creamy. Adjust seasoning as needed.
