Salt for boiling water
2 tablespoons of olive oil
1 pound of salmon fillet, skin removed
3 cloves of garlic, minced
5 cups of fresh spinach
1 cup of heavy cream
1/2 cup of grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
While the pasta cooks, heat olive oil in a large skillet over medium heat. Season the salmon fillet with salt and pepper, then add to the skillet. Cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the pan and flake it into bite-sized pieces.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the fresh spinach and cook until wilted, about 2-3 minutes.
Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese until melted and well combined. If the sauce seems too thick, add a bit of the reserved pasta water to reach the desired consistency.
Add the cooked pasta to the skillet, followed by the flaked salmon. Gently toss everything together until the pasta is well coated in the creamy sauce. Season with additional salt and pepper to taste.
Transfer the creamy salmon spinach pasta to serving plates and garnish with freshly chopped parsley. A touch of lemon zest can also brighten the flavors.
