2 large sweet potatoes (about 2 lbs), peeled and diced
4 tablespoons unsalted butter (or coconut oil for a dairy-free version)

Instructions
In a large pot, add diced sweet potatoes and cover them with water. Bring to a boil over high heat, then reduce the heat to medium and let it simmer for 15-20 minutes, or until fork-tender.
