2 cups of fresh strawberries (sliced)
1 cup of heavy cream
1/4 cup of granulated sugar
2 teaspoons of unflavored gelatin
2 tablespoons of water
1 teaspoon of vanilla extract
Wash and slice the fresh strawberries, then sprinkle 2 tablespoons of sugar over them and let them sit for 10 minutes.
Mix the gelatin with 2 tablespoons of cold water and let it sit for 5 minutes. Then, dissolve it over a double boiler for 3-5 minutes.
Whip 1 cup of heavy cream until soft peaks form, which takes about 3-5 minutes.
Mash the strawberries lightly to create a chunky sauce, and stir in the dissolved gelatin and vanilla extract.
Fold one-third of the whipped cream into the strawberry mixture, then gently fold in the rest without over-mixing.
Transfer the mousse into dishes, cover them, and chill for at least 2 hours before serving.
