1 lb of diced turkey breast
1 medium onion, finely chopped
3 cloves of minced garlic
8 oz of sliced mushrooms
2 cups of chicken broth
1 cup of heavy cream
2 tbsp of olive oil
8 oz of pasta (egg noodles or whole grain)
1 tsp of dried thyme
Salt and pepper to taste
Instructions
Bring a pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced turkey breast and cook for about 5-7 minutes, or until browned and cooked through. Season with salt and pepper. Remove the turkey from the pan and set aside.
In the same skillet, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent. Then, add the sliced mushrooms and thyme, stirring until the mushrooms are tender, about 5 minutes.
Pour in the chicken broth and bring the mixture to a boil. Reduce heat and stir in the heavy cream. Simmer for 5 minutes, allowing the sauce to thicken slightly.
Add the cooked turkey back into the skillet along with the drained pasta. Toss everything together until the pasta is coated in the creamy sauce. Adjust seasoning as needed.
