1 zucchini, diced
1 cup broccoli florets
4 cups vegetable broth
1 cup heavy cream or coconut milk for a dairy-free option
Salt and pepper to taste

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring occasionally until the onion becomes translucent (about 3-4 minutes).
Add the chopped carrots and celery to the pot, stirring occasionally and letting them sauté for another 5 minutes. Then, toss in the chopped potatoes and stir well to combine.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for about 15 minutes. Add the zucchini and broccoli, then simmer until all vegetables are tender.
Using an immersion blender, blend the soup until it reaches your desired creaminess. For a chunkier texture, blend only half of the soup.
Add the heavy cream or coconut milk, stirring well to combine. Season with salt and pepper to taste. Allow the soup to simmer for another 5 minutes.
