  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, stirring occasionally until the onion becomes translucent (about 3-4 minutes).
  • Add the chopped carrots and celery to the pot, stirring occasionally and letting them sauté for another 5 minutes. Then, toss in the chopped potatoes and stir well to combine.
  • Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for about 15 minutes. Add the zucchini and broccoli, then simmer until all vegetables are tender.
