1 zucchini, diced
2 cups of vegetable broth

Instructions
Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté for about 3-4 minutes, or until the onions are translucent and fragrant.
Chop the carrots, celery, potato, and zucchini, and stir them into the pot. Cook for about 5 minutes until they slightly soften, stirring occasionally to avoid sticking.
Pour in the vegetable broth, ensuring all the vegetables are submerged. Bring the mixture to a boil, then lower the heat and let it simmer for around 15 minutes, until the veggies are tender.
