1 medium onion, diced
2 cloves garlic, minced
3 medium carrots, chopped
2 stalks celery, chopped
1 medium potato, peeled and diced
1 zucchini, diced
1 cup green beans, trimmed and chopped
4 cups vegetable broth
1 cup heavy cream or coconut milk
Salt and pepper to taste
Optional: Fresh herbs such as thyme or parsley for garnish
Instructions
Step 1: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes. Stir in minced garlic and cook for an additional 1 minute until fragrant.
Step 2: Add chopped carrots, celery, potato, zucchini, and green beans. Stir well and cook for about 5-7 minutes.
